Ingredients

  • 2 medium beets
  • 2 large carrots
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 ball burrata
  • 2 tablespoons balsamic vinegar
  • 1 handful of arugula

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and roast for about 45 minutes until tender.
  3. Peel the roasted beets and slice them into wedges.
  4. Peel and slice the carrots, then toss with olive oil and salt and roast for 20 minutes.
  5. On a serving platter, arrange the arugula, beets, and carrots.
  6. Place the burrata in the center and drizzle with balsamic vinegar.
  7. Serve immediately.
