Ingredients

  • 8 ounces fusilli pasta
  • 2 cups corn, grilled or canned
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder

Instructions

  1. Cook the fusilli pasta according to package instructions; drain and set aside to cool.
  2. In a large bowl, combine the corn, red bell pepper, red onion, cilantro, and cotija cheese.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a separate bowl, whisk together the mayonnaise, lime juice, and chili powder.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicier kick, add diced jalapeños to the salad.
