  • 1 cup quinoa
  • 2 cups water
  • 1 pound asparagus, trimmed and cut into pieces
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and combine it with water in a pot. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed.
  2. While the quinoa is cooking, steam the asparagus for 3-4 minutes until bright green and tender.
  3. In a large bowl, combine the cooked quinoa, asparagus, chickpeas, cherry tomatoes, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to combine.
  5. Serve immediately or refrigerate for later.
