Ingredients

  • 2 cups arugula
  • 1 pound baby potatoes
  • 1/2 cup walnuts
  • 1/2 cup Parmesan cheese
  • 2 cloves garlic
  • 1/4 cup olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the baby potatoes in salted water until tender, then drain and let cool.
  2. In a food processor, combine arugula, walnuts, Parmesan cheese, and garlic. Blend until well mixed.
  3. With the processor running, slowly add olive oil until the pesto is smooth.
  4. Cut the cooled potatoes in half and mix in a large bowl with the arugula pesto.
  5. Season with salt and pepper to taste. Serve chilled or at room temperature.
