  • 1 cup crumbled feta cheese
  • 1 medium cucumber, diced
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast for about 45 minutes or until tender.
  2. Once the beets are cool, peel and dice them.
