  • 1 cup granulated sugar
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 12 ounces dark chocolate, melted
  • 2 cups fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
  3. In another bowl, beat the sugar and cream cheese until smooth. Add vanilla and mix well.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in melted dark chocolate until fully combined.
  6. Fold in raspberries gently.
  7. Pour the cheesecake mixture into the prepared crust and smooth the top.
  8. Bake for 55-60 minutes or until set. Turn off the oven and leave the cheesecake inside for 1 hour.
  9. Remove from the oven and chill in the refrigerator for at least 4 hours before serving.
