  • 1/2 cup granulated sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, beat the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing in between each addition.
  4. Stir in the vanilla extract and mix until combined.
  5. In a separate bowl, sift together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the shredded coconut.
  8. Divide the batter into the lined cupcake pan.
  9. Bake for 18–20 minutes or until a toothpick comes out clean.
  10. Let cool completely before frosting.

Notes

  • For extra coconut flavor, use coconut extract in addition to vanilla.
  • Top with coconut whipped cream for a delightful finish.
