Cinnamon Roll Muffins

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 cup powdered sugar (for icing)
  • 2 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a separate bowl, mix brown sugar and ground cinnamon to create the cinnamon swirl mixture.
  6. Fill each muffin cup halfway with the batter, sprinkle with the cinnamon swirl mixture, then top with the remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. For the icing, whisk together the powdered sugar and milk until smooth and drizzle over the muffins once they have cooled slightly.

Notes

  • For best results, do not overmix the batter.
  • You can add nuts or raisins for extra flavor.
