- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- 1/2 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a separate bowl, mix brown sugar and ground cinnamon to create the cinnamon swirl mixture.
- Fill each muffin cup halfway with the batter, sprinkle with the cinnamon swirl mixture, then top with the remaining batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- For the icing, whisk together the powdered sugar and milk until smooth and drizzle over the muffins once they have cooled slightly.
