- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 teaspoon ground cinnamon
- 1 cup sour cream
- 1 cup heavy cream
- 1/2 cup chocolate chips (optional)
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter.
- Press the mixture into the bottom of a springform pan.
- In another bowl, beat the cream cheese with 1 cup sugar until smooth.
- Add vanilla extract, eggs (one at a time), and cinnamon, mixing well after each addition.
- Fold in sour cream and heavy cream until combined.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
- Let cool, then refrigerate for at least 4 hours or overnight.
- Top with whipped cream and chocolate chips before serving, if desired.
