  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 teaspoon ground cinnamon
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In another bowl, beat the cream cheese with 1 cup sugar until smooth.
  5. Add vanilla extract, eggs (one at a time), and cinnamon, mixing well after each addition.
  6. Fold in sour cream and heavy cream until combined.
  7. Pour the cheesecake batter over the crust in the springform pan.
  8. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  9. Let cool, then refrigerate for at least 4 hours or overnight.
  10. Top with whipped cream and chocolate chips before serving, if desired.

Notes

  • Serve with a sprinkle of cinnamon sugar for extra flavor.
  • Can be made a day in advance for best results.
