  • 1 ½ cups chocolate wafer cookies
  • ½ cup unsalted butter, melted
  • 2 cups heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup fresh raspberries
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine crushed chocolate wafer cookies and melted butter, then press into the bottom of a springform pan.
  3. In a saucepan, heat 1 cup of cream until just simmering, then remove from heat and add chocolate chips until melted and smooth.
  4. In a mixing bowl, whisk together eggs, sugar, and vanilla, then slowly add the chocolate mixture.
  5. Fold in the remaining whipped cream and raspberries.
  6. Pour the mousse over the crust and refrigerate for at least 4 hours or until set.
  7. Garnish with extra raspberries before serving.
