- 1 ½ cups chocolate wafer cookies
- ½ cup unsalted butter, melted
- 2 cups heavy cream
- 1 cup semi-sweet chocolate chips
- 1 cup fresh raspberries
- ¾ cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C).
- In a bowl, combine crushed chocolate wafer cookies and melted butter, then press into the bottom of a springform pan.
- In a saucepan, heat 1 cup of cream until just simmering, then remove from heat and add chocolate chips until melted and smooth.
