  • 1/3 cup all-purpose flour
  • 1 ¾ cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 pie crusts

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cook the chicken in a pot until it’s no longer pink; then cube it.
  3. In another pot, melt the butter and stir in the flour, cooking for 1 minute.
  4. Add the chicken broth, milk, salt, pepper, and thyme to the mixture, and stir until bubbly.
  5. Stir in the carrots, celery, peas, and chicken.
  6. Pour the filling into one pie crust in a pie dish.
  7. Cover with the second pie crust and seal the edges.
  8. Cut slits in the top crust to allow steam to escape.
  9. Bake for 30-35 minutes or until the crust is golden brown.
  10. Let it cool for a few minutes before serving.
