  • 4 slices turkey bacon
  • 1 pound boneless, skinless chicken breast
  • 4 cups chicken broth
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 cup frozen biscuit pieces

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add chicken breast, chicken broth, and bring to a boil.
  3. Add mixed vegetables, thyme, and garlic powder; simmer until chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Mix heavy cream and flour in a bowl; stir into the soup and let thicken.
  6. Add biscuit pieces and cook for another 10 minutes.
  7. Serve hot with chopped bacon on top.
