Chicken Meatballs with Orzo

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20 minutes or until cooked through.
  5. In a pot, bring the chicken broth to a boil and add the orzo. Cook according to package instructions.
  6. Stir in the spinach and cherry tomatoes for the last 5 minutes of cooking.
  7. Serve the orzo topped with the baked meatballs.
