Chicken Enchiladas with Sour Cream White Sauce: Easy & Delicious Recipe

CHICKEN ENCHILADAS WITH SOUR CREAM WHITE SAUCE

Enjoy a flavorful and easy recipe for chicken enchiladas topped with a delicious sour cream white sauce.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 cup shredded cheese
  • 1 taco seasoning packet or homemade seasoning
  • 8 tortillas
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a pan, sauté the onion in olive oil until soft.
  3. Add the shredded chicken and taco seasoning; mix well.
  4. In a separate bowl, combine sour cream and chicken broth.
  5. Spread some of the sour cream mixture in the bottom of a baking dish.
  6. Fill tortillas with the chicken mixture, roll them up, and place in the dish.
  7. Pour the remaining sour cream mixture over the top and sprinkle with shredded cheese.
  8. Bake for 25-30 minutes or until cheese is melted and bubbly.

Notes

  • For added flavor, use rotisserie chicken.
  • Can substitute low-fat sour cream for a lighter version.
