- 2 cups cooked, shredded chicken
- 1 cup sour cream
- 1 cup chicken broth
- 1 cup shredded cheese
- 1 taco seasoning packet or homemade seasoning
- 8 tortillas
- 1 tablespoon olive oil
- 1/2 cup chopped onion
- Preheat oven to 350°F (175°C).
- In a pan, sauté the onion in olive oil until soft.
- Add the shredded chicken and taco seasoning; mix well.
- In a separate bowl, combine sour cream and chicken broth.
- Spread some of the sour cream mixture in the bottom of a baking dish.
- Fill tortillas with the chicken mixture, roll them up, and place in the dish.
- Pour the remaining sour cream mixture over the top and sprinkle with shredded cheese.
- Bake for 25-30 minutes or until cheese is melted and bubbly.
Notes
- For added flavor, use rotisserie chicken.
- Can substitute low-fat sour cream for a lighter version.
