Cannoli Poke Cake

A deliciously unique dessert that combines the flavors of classic cannoli with the moistness of poke cake.

  • 1 box yellow cake mix
  • 3 large eggs
  • 1 cup water
  • 1 cup ricotta cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the yellow cake mix according to the package instructions and bake in a 9×13 inch pan.
  2. Once the cake is cooled, use a fork to poke holes all over the top.
  3. In a medium bowl, mix ricotta cheese, powdered sugar, and vanilla extract until smooth.
  4. Spread the ricotta mixture over the cake, making sure to fill the holes.
  5. Top with mini chocolate chips.
  6. In another bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.
  7. Spread the whipped cream over the top of the cake.
  8. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a more traditional cannoli flavor, you can add orange zest to the ricotta mixture.
