Cajun White Chicken Chili

  • 1 pound chicken breasts, cooked and shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 3 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 green bell pepper, diced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and bell pepper; sauté until softened.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the Cajun seasoning, black pepper, and salt; cook for 30 seconds to toast the spices.
  4. Add the cooked chicken, turkey bacon, white beans, corn, and chicken broth; bring to a simmer.
  5. Let simmer for 20 minutes, stirring occasionally.
  6. Adjust seasoning if necessary and serve hot.

Notes

  • For extra spice, add diced jalapeños to the mix.
  • Top with shredded cheese or fresh cilantro before serving.
