Cajun Chicken Orzo

  • 2 cups orzo pasta
  • 1 pound boneless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 3 cups chicken broth
  • 1 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup parsley, chopped

Instructions

  1. Cook the orzo pasta according to package instructions and set aside.
  2. Season the chicken breasts with Cajun seasoning.
  3. In a skillet, heat olive oil over medium heat and cook the chicken until golden brown and cooked through.
  4. Remove chicken and add bell peppers, onions, and garlic to the skillet, sauté until softened.
  5. Add chicken broth, bring to a boil, and then stir in the cooked orzo.
  6. Stir in heavy cream and adjust seasoning if needed.
  7. Slice the chicken and serve over the orzo mixture, garnished with parsley.
