Start your day with these delicious and nutritious breakfast sweet potato bowls that are easy to prepare and packed with flavor.

  • 2 medium sweet potatoes
  • 4 eggs
  • 1 cup black beans, rinsed
  • 1 avocado, sliced
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork.
  3. Place them on a baking sheet and roast for 45 minutes or until tender.
  4. In the last 10 minutes of cooking, fry the eggs in olive oil over medium heat until desired doneness.
  5. Once the sweet potatoes are cooked, slice them open and season with chili powder and salt.
  6. Top each sweet potato with black beans, a fried egg, and avocado slices.
  7. Garnish with fresh cilantro and serve warm.
