Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Poke holes in the sweet potatoes with a fork and roast for about 45 minutes or until tender.
  3. While the potatoes are roasting, cook the turkey bacon in a skillet until crispy.
  4. In the same skillet, cook the eggs to your liking (poached, scrambled, or fried).
  5. Once the sweet potatoes are done, cut them in half and fluff the insides with a fork.
