Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, toss them with olive oil, salt, and pepper, and roast for 25-30 minutes.
  3. In a skillet, cook the turkey bacon until crispy and set aside.
  4. In the same skillet, fry the eggs to your liking.
  5. Assemble the bowl by layering roasted sweet potatoes, sliced avocado, fried eggs, and crumbled turkey bacon, topped with shredded cheese.
