  • 1 tablespoon maple syrup
  • 1 cup Greek yogurt
  • 1/4 teaspoon cinnamon
  • 1/4 cup granola
  • 2 tablespoons walnuts, chopped
  • 1 tablespoon chia seeds

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine butternut squash, olive oil, and maple syrup. Toss to coat.
  3. Roast in the oven for 25-30 minutes, or until tender.
  4. In a bowl, layer Greek yogurt, roasted squash, and sprinkle with cinnamon, granola, walnuts, and chia seeds.
