- 1 pound breakfast sausage
- 4 medium potatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 4 large eggs
- Preheat the oven to 400°F (200°C).
- In a large skillet, cook the breakfast sausage over medium heat until browned.
- Add the diced potatoes, olive oil, and seasonings; stir to combine.
- Transfer the mixture to a baking sheet and bake for 25-30 minutes, stirring halfway through.
- While the potatoes are baking, cook the eggs in a separate pan as desired (scrambled, fried, etc.).
- Once the potatoes are cooked, combine them with the sausage and divide into meal prep containers.
- Top each bowl with a cooked egg.
Notes
- Feel free to add vegetables such as bell peppers or spinach for added nutrition.
