Blueberry Crisp Cheesecake Bars

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a lined baking dish to form the crust.
  4. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Spread the cream cheese mixture over the crust evenly.
  6. In another bowl, toss blueberries with lemon juice and cornstarch.
  7. Spread the blueberry mixture over the cheesecake layer.
  8. Bake for 30-35 minutes until set.
  9. Let cool, then refrigerate for at least 2 hours before serving.
