  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 8 corn tortillas
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1 cup cilantro, chopped

Instructions

  1. Rinse quinoa under cold water, then combine it with water in a pot and bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy.
  3. In a bowl, mix black beans, cumin, chili powder, garlic powder, and salt.
  4. Once quinoa is cooked, stir in the black bean mixture and corn kernels.
  5. Warm corn tortillas in a skillet.
  6. Assemble tacos by placing quinoa mixture on tortillas, and topping with avocado and cilantro.

Notes

  • For extra flavor, consider adding fresh lime juice on top.
