- 1 cup all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 8 ounces cream cheese
- 1/4 cup powdered sugar
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix until smooth.
- Beat in the eggs, one at a time, until the mixture is well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the flour mixture to the pumpkin mixture, stirring until just combined.
- In another bowl, beat the cream cheese with the powdered sugar until smooth.
- Fill each muffin cup halfway with the pumpkin batter. Add a spoonful of the cream cheese mixture, then top with more pumpkin batter until the cups are full.
