  • 1 cup all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix until smooth.
  3. Beat in the eggs, one at a time, until the mixture is well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the flour mixture to the pumpkin mixture, stirring until just combined.
  6. In another bowl, beat the cream cheese with the powdered sugar until smooth.
  7. Fill each muffin cup halfway with the pumpkin batter. Add a spoonful of the cream cheese mixture, then top with more pumpkin batter until the cups are full.
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For best results, use fresh pumpkin puree.
  • Add chocolate chips for an extra treat.
