  • ½ cup packed brown sugar
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  5. In a separate bowl, beat the cream cheese with powdered sugar until smooth.
  6. Fill each muffin liner halfway with batter, then add a dollop of cream cheese mixture, and top with more batter until three-quarters full.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes
