Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a separate bowl, beat cream cheese with powdered sugar until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, then add a small dollop of cream cheese mixture, followed by more pumpkin batter to fill the cups.
