  • 1/2 cup cream cheese
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a large bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, eggs, and vegetable oil.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. In a separate bowl, beat the cream cheese until smooth.
  6. Fill each muffin liner halfway with the pumpkin batter, then add a dollop of cream cheese mixture on top, followed by more pumpkin batter to fill the liners about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
