- 1 cup granulated sugar
- 1 cup canned pumpkin puree
- 1/2 cup cream cheese
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with muffin liners.
- In a large bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the pumpkin puree, eggs, and vegetable oil.
- Mix the wet ingredients into the dry ingredients until just combined.
- In a separate bowl, beat the cream cheese until smooth.
- Fill each muffin liner halfway with the pumpkin batter, then add a dollop of cream cheese mixture on top, followed by more pumpkin batter to fill the liners about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
