  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/4 cup cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a separate bowl, beat the cream cheese and powdered sugar together until smooth.
  7. Fill each muffin cup halfway with the pumpkin batter, then add a spoonful of the cream cheese mixture, and top with more pumpkin batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.
