  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ teaspoon ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and ginger.
  3. In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill muffin cups about two-thirds full with batter.
  6. Bake for 20-25 minutes until a toothpick comes out clean.
  7. Let muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, add a swirl of cream cheese mixture on top before baking.
