Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the pumpkin puree, eggs, oil, and vanilla until smooth.
  4. Combine the wet and dry ingredients, stirring until just blended.
  5. In a separate bowl, beat the cream cheese and powdered sugar until creamy.
  6. Fill each muffin liner halfway with the pumpkin batter, then add a spoonful of cream cheese mixture before topping with more pumpkin batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
