  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about halfway.
  6. Bake for 20-25 minutes or until a toothpick comes out clean from the center of a muffin.
  7. Let cool for a few minutes before transferring to a wire rack.
