  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and mix until well combined.
  4. Add the eggs and vanilla extract to the pumpkin mixture and stir until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. In a separate bowl, beat the cream cheese until smooth.
  7. Fill each muffin cup halfway with the batter, then add a spoonful of cream cheese and top with more batter.
  8. Bake for 20-25 minutes until a toothpick comes out clean.
  9. Allow to cool before serving.
