  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

  • 1/2 cup Greek yogurt
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flours, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the Greek yogurt, pumpkin puree, honey or maple syrup, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
