- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup Greek yogurt
- 1 cup pumpkin puree
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the flours, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix the Greek yogurt, pumpkin puree, honey or maple syrup, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
