  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon allspice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine pumpkin puree, sugar, and brown sugar.
  3. Add in vegetable oil and eggs, mixing until well blended.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and allspice.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • For added flavor, sprinkle some cinnamon sugar on top before baking.
  • These muffins are best served warm but can be stored for several days.
