  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp pumpkin pie spice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, eggs, oil and vanilla until well combined.
  3. In another bowl, whisk together flour, sugars, baking powder, baking soda, salt, and pumpkin pie spice.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool for a few minutes in the pan before transferring to a wire rack.

Notes

  • For an extra touch, add chocolate chips or walnuts to the batter.
  • Serve warm for the best flavor experience.
