  • 1/2 cup vegetable oil
  • 2 large eggs

  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine all the dry ingredients: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together the pumpkin puree, vegetable oil, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before serving.
