  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 8 ounces cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, oil, and eggs until well blended.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. In a separate bowl, beat the cream cheese and powdered sugar until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, then add a spoonful of cream cheese mixture on top, followed by more pumpkin batter until three-quarters full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for a few minutes before transferring to wire racks to cool completely.

  • For extra sweetness, add chocolate chips to the batter.
