  • 1/2 cup Greek yogurt
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine pumpkin puree, Greek yogurt, brown sugar, honey, eggs, and vanilla extract.
  3. In another bowl, whisk together baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the walnuts if using.
  5. Divide the batter into the muffin tin and fill each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let them cool before enjoying.
