Baked Cinnamon French Toast Muffins

  • 3 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, melted
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Cube the bread and place it in a large bowl.
  3. In a separate bowl, whisk together the eggs, milk, sugar, cinnamon, vanilla, and melted butter.
  4. Pour the egg mixture over the bread and let it soak for about 10 minutes.
  5. Scoop the mixture into the muffin tin, filling each cup about 3/4 full.
