Bacon Cheddar Gnocchi Soup

A creamy and hearty soup featuring the delightful combination of bacon, cheddar cheese, and tender gnocchi.

Ingredients

  • 4 slices bacon
  • 1 cup gnocchi
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and chop.
  2. Add the diced onion and cook until translucent.
  3. Stir in the garlic and thyme, cooking for another minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add gnocchi and cook until tender.
  6. Stir in heavy cream and shredded cheddar until melted.
  7. Mix in the cooked bacon and season with salt and pepper.
  8. Serve hot, garnished with additional cheese if desired.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • Adjust the thickness by adding more or less cream.
