  • 1 onion, diced

  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (9 oz) package tortellini
  • 2 cups kale, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add sausage and cook until browned.
  3. Add onion, carrots, and celery, and cook until softened.
  4. Stir in garlic and cook for an additional minute.
  5. Add chicken broth, bring to a boil.
  6. Stir in tortellini and cook according to package instructions.
  7. Add kale and thyme, stirring until kale is wilted.
  8. Season with salt and pepper to taste.
