  • 1/2 teaspoon salt
  • 1 cup diced apples (peeled and cored)
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the egg and vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Gradually mix into the wet ingredients.
  5. Fold in the diced apples.
  6. In a small bowl, combine sugar and cinnamon for rolling.
  7. Roll dough into balls and coat in the cinnamon-sugar mixture.
  8. Place on baking sheets and flatten slightly.
  9. Bake for 10-12 minutes, or until edges are lightly golden.
