Apple Cider Cheesecake

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup apple cider
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth.
  4. Add in the apple cider, sugar, eggs, vanilla, cinnamon, and nutmeg, mixing until fully incorporated.
  5. Pour the cheesecake mixture over the crust.
  6. Bake for 55-60 minutes or until the center is set.
  7. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For best results, use fresh apple cider.
  • You can top with caramel sauce or whipped cream for added indulgence.
