38g Protein Chicken Enchiladas with Dreamy White Sauce

Delicious and healthy chicken enchiladas packed with protein and smothered in a creamy white sauce.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese
  • 1 cup sour cream
  • 1 cup white sauce
  • 8 flour tortillas
  • 1 teaspoon taco seasoning
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the chicken, cheese, sour cream, taco seasoning, and green onions.
  3. Spread some white sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  5. Pour the remaining white sauce over the top and sprinkle with extra cheese.
  6. Bake for 25-30 minutes or until bubbly and golden.

Notes

  • Feel free to add black beans for extra fiber.
  • Serves well with fresh avocado on top.
